What is the American National Standards Institute?

The American National Standards Institute (ANSI) is a national organization formed to oversee the development and implementation of standards in the International Kitchen Exhaust Cleaning Association (IKECA), including products, services and processes. The role is an important one — in addition to ensuring quality products, the institute also ensures fairness and respect throughout the industry.

Where did ANSI come from?

In 2009, IKECA became the accredited standards developer and set a goal to develop a specific set of ethical codes for the commercial kitchen exhaust cleaning industry. The standards focused on cleaners, inspectors and end users, and, later, food service industry members. Industry members can join IKECA to receive a copy of the standards, as well as guidance.

What are the standards?

The institute upholds three standards:

  • Standard for methodology for cleaning commercial kitchen exhaust systems 
  • Standard for the methodology for inspection of commercial kitchen exhaust systems
  • Standard for the methodology for maintenance of commercial kitchen exhaust systems

What’s next?

The American National Standards Institute is developing a digital format for its standards — including future standards. The new format will help ease of use, and will include mobile platforms.
